GREEN PEA, LENTIL AND FRESH MINT DIP | NUT FREE | GLUTEN FREE

A fresh vibrant dip with pea-lentil-ful of flavours of spring, made with green peas, lentils and mint, its easy to make, and less than 10 ingredients!

How to use this green pea, lentil dip

This dip can be enjoyed in many different ways. You can use it either as a dip, a spread in sandwiches, wraps, pittas or even a sauce. You can use it with anything that you think would go nicely with the flavours of peas and mint!

I like to serve this dip with:

  • Seedy crackers
  • Toasted pitta
  • Thinly sliced and toasted ciabatta
  • Fresh crunchy vegetables like asparagus, carrots, sugar snap peas and cucumber.

This would pair really nicely with my homemade dukkah recipe for extra texture and crunch.

Ingredients you’ll need

  • Baby Spinach: This will be the base of the dip. 
  • Green Peas: Make sure they are defrosted from the freezer
  • Green Lentils: For added protein and fibre!
  • Sunflower Seeds: Another key ingredient in this dip that adds a nutty taste. *If you prefer a dip with less texture, soak the seeds in hot water whilst preparing the other ingredients
  • Fresh Mint: Peas and Mint pair PERFECTLY.
  • Garlic: well, what dip would be complete without it?
  • Lemon Zest: To lighten the dip flavour
  • Lemon juice: Just a touch, for balance!
  • Tahini: to bring everything together.
  • Salt & pepper: To taste. 
  • Sun-dried tomato paste: to serve on top of the dip

How to make this recipe

*If you want a smoother dip* Soak the sunflower seeds in hot waster for 5 minutes or so, drain, then add them to a food processor with the rest of the ingredients.

Pulse until it reaches your desired texture. Some people like it more smooth, some prefer it more rustic. It’s entirely up to you!

Let the dip cool in the fridge before serving, then serve with something to scoop up the dip with.

GREEN PEA, LENTIL AND FRESH MINT DIP

Ingredients

Scale
  • 2 Cups Spinach
  • 1 Cup of frozen peas (defrosted)
  • 1 Cup green lentils 
  • 3/4 Cup Sunflower seeds*
  • 1 Cup packed Fresh mint
  • 1 TBSP Tahini 
  • 3 Cloves Garlic peeled
  • 1 Lemon Zested
  • Juice of 1/2 lemon
  • Salt and Pepper to taste
  • 13 TBSP cold water

Instructions

  1. Pre soak the sunflower seeds in hot water to soften. Drain then add these to a food processor/blender with the other ingredients.  (Skip this step if you don’t mind a more textured dip)
  2. Add all the ingredients to a blender/food processor and blend until it reaches your desired consistency, add water if needed to thin/ help the blender blend. 
  3. Chill in the fridge
  4. Serve with a swirl of sundried tomato paste or harissa and red onion. (optional)
